The Butcher Club's barbie tips

Fancy the smell of a succulent pork chop sizzling on your barbecue plate? So do I. In fact, here’s my guide to getting the most out of your Butcher Club pork chops in the comfort of your own backyard.

  • All the best pork chops have a marinade. My favourite is simple, but extremely effective. Squirt about half a cup of honey into a mixing bowl, add a couple of minced garlic cloves, some ginger and chilli to taste, juice from a full lemon and around ¾ cup of soy sauce. Give it a good whisk.
  • Place 4-5 pork chops into a large zip lock bag, add the marinade, massage it in a little, and leave in the fridge for at least half an hour.
  • Lightly grease and fire up the grill of your barbie on medium-high heat.
  • You only need around 8-9 minutes on the first side of your chops. Any longer and it’ll start getting tough and chewy.
  • Turn your chops when the juices start pooling on the surface and they look about halfway cooked through.
  • Give the second side a good 6-7 minutes (or until cooked through), remove from grill and cover in foil on a plate for around 5 minutes.
  • Enjoy the tastiest pork chops you’ve ever eaten.
